The space
A working greenhouse as dining room
Maurice's homestead greenhouse — with its corrugated polycarbonate roof, exposed wood beam grid, and wall-to-wall plant life — was selected not as a backdrop but as a co-host. The space's existing textures, filtered light, and living ceiling did the atmospheric work that décor would have undermined.
The table
Menu paired to what the garden could actually give
The menu was designed in direct conversation with the harvestable garden — guests clipped herbs before sitting, ingredients moved from soil to table within the same hour. This wasn't styling; it was a structural decision that collapsed the distance between place and plate, making the table feel earned rather than arranged.
The arc
An evening that moved from open to still
The experience was choreographed across four zones: wide garden arrival → enclosed greenhouse table → open field walk → firepit close. Each transition tightened the emotional register — expansive and kinetic on arrival, warm and convivial at the table, then still and glowing at the fire. The firepit had no agenda. That was the point.
Director's note
"The greenhouse doesn't need décor — it needs to be inhabited correctly. We designed the evening so the space revealed itself as guests moved through it, rather than presenting everything at once."
